For the past 2 years my best friend in the whole world has been losing weight like crazy she has dropped to 97 lbs (5'5") she has sores that wouldn't heal, headaches , heavy bleeding and an endless list of ailments. During that time she saw one specialist after another who would do a few tests , tell her to eat more, drink protein shakes, provide antibiotics etc. No matter how much she ate she was still losing weight . "Friends" started treating her badly and making snide remarks about her "dieting" and how "terrible" she looked .She was in and out of the hospital 4 least times. They ruled out so many many things but only today FINALLY pinpointed what is wrong with her. During one of her recent tests they noticed a dramatic thinning in her intestines,when all was said an done she has Celiac disease which is an allergy to gluten resulting in damage to the small intestine. Although this is a hard lifestyle change it isn't the cancer sentence we were starting to be convinced was coming. Any information on how to make this transition easier, a good recipe , an excellent gluten free product you know of etc would be appreciated. It is a relief to know my friend isn't dying, I know that sounds dramatic but it has been a hell of a year for her and I started to really believe she would be gone before the year is out. Mrs Sav

User Details are only visible to members.	Thank you KIND and I appreciate you sharing your own experience. Life is about adjustments and challenges , some much harder than others. I am grateful she is a strong , independent (too much so lol) take charge kinda gal and has overcome many life trials others would have buckled under from. With the exception of the last week of "waiting" she has been extremely positive and matter of fact about the whole long ordeal. I've had to pump her for info and I am her BEST and closest friend. She keeps everything PRIVATE . I am the only one she has told how truly sicj she has been and she has me sworn to absolute and complete secrecy. I can't tell you how many times over the years she has gone into the hospital and NO ONE knows until she is out and than very few on a need to know bases.......meaning her own adult kids don't know . She refuses to ask for or accept help....even from her children.....she is one stubborn lady. I constantly tell her how selfish she is for not allowing her friends to be there for her and yet is hurt if we do not come to her in our time of need. She is one incredible women and the thought I might lose her was more than I could stand. My trying to "help" her with is is filling MY need to do something , anything to help make this easier. It is an honor to call her friend. Mrs Sav

User Details are only visible to members.	Oh Mrs Sav, I forgot you did all that already! That was very good to just make them do all the reading. I can't even see all of the product information half the time! lol Vegan and vegetarian is harder than mine and this Gluten Free is harder then all of them. Sometimes I think any kind of preservative can also attribute to many painful health issues. Not sure for Celiac, but something else to consider. (not that she needs more to consider!) I was being diagnosed with crazy stuff last year, and talk of Celiac, but since I'm almost off all preservatives, it's all gone. Crazy how much our bodies just cannot process everything we want to put into it and we don't know until we stop it. I hope she does well with the transition. Do remind her that this drastic change cannot happen over night, little by little she will get better at it and it will become easier. :)

Thank you Kind....I ve been there was making all these separate meals when the kids all went Vegetarian, Vegan, Organic etc......it was terrible so I simply stopped doing it. I'd take at least one of them to the grocery store and my job was to push the cart and pay. I refused to read labels, refused to make a huge mess and refused to make 3 different meals to accommodate their chose of diet . Even then I was left with an enormous kitchen mess as 2 or 3 of them would cook for 1 or 2 of them and not bother to clean up.......gosh I miss my kids but not the mess and cooking nightmares. User Details are only visible to members.	At 51 I haven't figured out if there is a way to retire from cooking! I don't think it's possible dammit!! I actually have to cook more now than ever, since all i do is try to figure out ways to make my meals appeal to my family as well as be okay for me. Often I have to cook two meals. It's the most frustrating part for me. I'm a big fan of quick, basics, and preferably minimal pots. lol, so there's a lot of soups around here. If I come across any for you in my travels I will pass them on.

I think the joy of cooking left her years ago....she's been doing Licensed daycare for more than 25 years and as such has been cooking for an army far too long. At 50 she is more than ready to retire lol. It is terribly difficult to work a "diet" when you are responsible to cook for others. Like all things , she will adjust I am sure. Perhaps she will find joy in creating simple things designed specifically for her palate and required diet but as you said it is time consuming....with her schedule , where that time will come from is left to be determined. User Details are only visible to members.	omg, 12 children, 3x's a day?! oh that poor woman... I literally had to ignore food at the beginning until I got my bearings. I just had to start with a few basics. I told my husband this week if he doesn't stop bringing shit in this house that I can't eat he's never getting fed again. Does she like to cook? All this home made cooking is more time consuming than I would like. I hope her surgery is soon!! :(

Thanks Kind, They will have to do surgery as she has a 6 to 8 portion of her intestines that has been so weakened it is in danger of bleeding out but as you said the diet should immediately help with the other problems and hopefully she will start regaining weight. She is a daycare provider so purging the cabinets will be more difficult as she feed a 12 children up to 3 meals a day and must meet state dietary guidelines . She has waited for her children to grow up with the intent of moving somewhere warm , she hates living in Minnesota and always has .She has decided this spring might be a good time. A changed diet, a change of scenery and a career change might just be in order. In the mean time I will support her from a distance and pass on all the information I gather here and in my own research and I appreciate all the tidbits ya'll have passed along. Mrs Sav

User Details are only visible to members.	I'm glad it's 'only' her diet that needs to be corrected, but personally I found it very overwhelming to completely change my diet. As i emptied my cabinets with foods I couldn't use anymore, I wrote down many basic things I needed to replace. I found, as I found some recipes I was interested in, I made really good health food lists with all the different ingredients and that helped alot. I don't have great places near me either, but I always have my list on me, and pick up things here and there. I know you said she doesn't like the computer that much, but I buy a lot of my health foods online now because they are too hard to find. ...Maybe you can help her with that? I think it takes some organization to avoid going nuts. I bet she will start feeling better as soon as she starts eating this way! That's wonderful, keep us posted... :)

I have an aunt who suffers from allergy to wheat, which in her case is even worse since she can go into anaphylactic shock if she ingests any. She has even had bad reactions to breathing in a little wheat flour and had to quit her teaching job (home economics) to save her health.
