Sounds tasty. While our nutritional philosophies are worlds apart, I can nevertheless appreciate tasty food from other culinary perspectives. Bon appetit!

VA, it's comfort food that is marginally healthy--since i make a vegetarian version. i alternate between a recipe that uses either butternut squash or sweet potatoes with beans for the chili "base" in the slow cooker or all beans (variety of pink, pinto, kidney). three different recipes (one uses veggie crumbles so could be modified for omnivores with real meat). all slow cooker between 7-9 hours. this cooked for 10 and was on "warm" for a couple more after that. very accommodating for long days.

pre-cook elbow macaroni (cut 2 minutes off the cooking time so they don't puff up beyond belief in the final cooking stages); rinse in cold water to stop the cooking process, & keep in fridge for the final stages. fold in the macaroni, cheddar cheese (a little more than 1/2 a lb shredded usually does fine), bake (if you want the crunchy cheesey top) & serve. it's awesome served with crusty bread or with cheesey garlic toast.

Chili mac. Interesting. Must research.

I make *great* chili. Geared towards low-carb-ers, but can be varied. I made a vegetarian version once. I make gigantic batches of it every couple of months and freeze most of it.
