Last night was curried lentil stew with warm herbed garlic bread.

FAN-FUCKING-TASTIC.

Some variants call it "eggs on fire". A pan about 1 inch deep with tomato sauce with red pepper flakes, brought to a simmer. I prefer scrambled eggs so I created a divot in the sauce and carefully poured it into the divot, covered and simmered until it's cooked through. Then a 1/4 inch thick piece of fresh mozzarella melted on top.
