I'm tired, lol! Seared. I was looking at a crim search response...crossed thoughts.

Most chickens around here are looking to be choked!

I just threw a bunch of veggies, garlic, shallot and herb in a pot and sauteed them, topped with search chicken. Threw in tomatoe, organic veg broth and cooking wine. We'll see what happens.

We like our beef just seared, almost raw:)

I like red meat very well cooked. Slow and low, like pot roast or ribs, is definitely my fave. I tend to find rare steak chewy and unpalatable, even a very good cut. We do marinate quite a bit, and there's usually a homemade sauce to go with any meat we eat. As far as liking it charred on the outside, hubby says it was interesting learning to ruin food to my liking LOL Interestingly, I like my tuna steak just seared a bit and cool in the middle. Go figure.

Snow crab leg beer boil tonight, with a caesar salad and some kind of starch.

A good cut such as filet mignon needs nothing. I just put on some real butter and sprinkle it lightly with herbs, then scare it a little with the grill just enough to bring it up to temp.

Some reasons:

-Marinating grilled food can dramatically reduce the formation of unhealthy HCAs (heterocyclic amines).

-marinades are used to tenderize tough cuts of meat.
