Last night we went out with awesome friends... I had a tossed salad, chicken marsella over fresh spinach, and steamed snowpeas, mushrooms and squash....brought 1/2 of my chicken home, ate all the spinach ( aprox 1 1/2 cups) it was very very good, ate my salad and veggys....2 drinks with dinner then a few glasses of wine along with great conversation with our friends !!

Awesome night!!

Tonight, I had a roast in the crock pot all day, I made steamed peas to go with ... didn't eat alot of the roast even though it was very good... ate more peas then anything.... lol but I love peas :)

Seared chicken breast topped with razor thin zucchini, slice of red bell pepper and fresh Mozz and a fresh basil leaf. A sauce made of sauteed herbs, lots of garlic, vegetable broth, olives, shallots cooking wine, lemon and reduced to a thickened version.

Tosca Reno-Creamy.

The linguini recipe was fine-too much Marhoram for our taste. We would just cut the amount in half nexr time, Greek salad with chicken this evening.
