Fall in Texas is so gorgeous after the hot summers, we usually grill out on Sundays...which is what we are doing today :0).

I have very little fear when it comes to food prep, or cooking, up to this subject, then I tread very gingerly. I guess smoking food is my cooking Kryptonite.

it isnt the food it is the getting sick from it that worries me, items like smoked turkey chicken etc scares me. fish i dont worry about so much , as poultry

so how do you know when it is cooked ? especilly when using low temps? I know time has a lot to do with it but I always fear undercooked food

well that too, a few freinds have told me to try the stove top, we have a great exhaust sytem but it still worries me ( smoke) maybe some day i will grow a big enough set to try my hand at smoked meat for now I will just sample every one else's

cool, have you ever smoked on your stove top? have heard people use this method but it kind of scares me , let alone the whole smoking issue , I am always worried I wouldn't cook items thouroghly . for these reasons I avoid this method athough I love smoked food
