RnK, do you want my tomatoe based, mustard based or Asian inspired? I have others. But these were just ran numerous times through a test kitchen because I'm writing a cookbook.

RnK, if you do it in your crockpot, use a few drops of liqued smoke. It won't be perfect but it will help it taste closer ;-) I am actually best known for gourmet. But this chef does do rustic and tons of southern. It's just my rustic is still hand crafted food. However, as the mother of 6 I know how to teach shortcuts. However, with my lovely assistants doign Thanksgiving at TheCaretakers for 20? They'll tell you Mrs Care had to sit on the phone with me for 2 hours yesterday over meticulous planning for a freaking traditional dinner I could cook blindfolded.

Pulled pork for 400 and other dishes. Most of it was done in the commercial location, but to do the 18 hour of the butts and shoulders, I drag this rig in here so I can come inside and have TV, get tea nap. Even when I have to be outside stoking the beast, it still feels much better in my own driveway than a parking lot all alone.

Well, the beast is in the driveway and I'm on an all night cooking with naps on the sofa night. So tonight was leftover corned beef made into hash. But with seet potato because it's healthier. Poached egg on top and creamed spinach.

Fresh Ham is a long/slow cook... BAG it and cook it for whatever it says on the BAG. It's that simple!!
