Last night we had BLT's...tonight not sure I am off today so something that takes a bit more time to prepare then sandwiches.... ( thats what we has Sat and Sunday ) Tues and /or Wed. might be something in the crock pot since I have to be at work by 5 am ....til 3-5 pm...we shall see...

I made shredded chicken enchiladas. I was experimenting. LOL Turned out pretty yummy.

LOL Si Senora She, queso is cheese lol. And it was yummy. I did not really eat dinner, I had a piece of nacho...at that time all I wanted was sleep and its way too late now to eat many calories.

queso is "cheese" in Spanish, and stands for cheese dip usually. We're a wealth of knowledge here, aren't we? hehe.

Going out to help celebrate some friends' 40th anniversary tonight at a mexican restaurant. Dan will prb. have enchiladas, his fave.
