Just have one word for you Seduction...its called IGNORANCE, and its something I dont like to agrue with soeone that does not know what she is talking about. ...This is the wife typing...Back to the kibbie...Yes it is beef, but its the finest cut of beef there is and it is not hand picked..The butcher takes every bits of grissell, fat, and it nothing but pure ground beef that is grinded three times by the butcher before anyone gets it. After it is frozen up to two days and thawed out we grind it one more time for the raw and a second time for the fried and baked. If you would like the recipe, I would be glad to give it to you. Here is a few more dishes we are sure you know more about than us....I"m going to type them down and you tell us what they are and how to cook them....BOUDIN, GUMBO, ETTOUFFEE, JAMBALAYA, SAUCE PIQUANT, FRICASSE...Oh here is a couple more Lebanses dishes you can explain to us what they are and how to prepare them...TABOULI, HUMUS, We had to LMAO at the way you explained the kibbie that was made with hamburger with wheat...WRONG ...Another thing hubby's dad has never been to Lebanon in his life but can speak and write the language, but kind of funny cause you cant but lived there a third of your life...

no the meat is not left out for months. This is regular chuck roast top grade, it is trimmed and is a high dollar cut of meat, We pay about 5 bucks a pound for it, and it goes in our freezer for at least 48 hours before we will use it..

justus, I seen a TV show where raw meat was left unrefridgerated for months to cure. is that kibby meat ?

I believe what you say. guess it is the way we have all been taught. different cultures use different ways to prepare food.

Ok for those who do not have a clue... Here we go again. First off it is not chopped beaf lol. it is a specialy ordered high grade ground chuck kibby meat. you have to order, here where we live there is only 2 places that know how to prepare the meat for ppl who want it. And seduction, before you tell me that we dont know what we are talking about. I the hubby am Lebanese and of course im as much a coon ass as any louisiana ppl, my dad who is 81 yrs old was born in crowley La. But my grandparents who i never got to meet, because they both died before i was born, came to america from lebanon, very poor, but came to get the american dream, and they did just that very successfull ppl. so i do know about kibby and all lebanese foods, i have been eating it all my life. it is very healthy foods.
