Fried chicken livers for me and the Mrs. Fried chicken tenders for the kids and fries tots and onion rings. I got rained out at work and today is Mrs. only day off this week,,So I told her to just enjoy her day off and I will cook super tonight.

Let's call it Chicken enchilada casserole, my own creation.

Cooked down boneless/skinless chicken breast with onions. Shredded the chicken then added taco seasoning and a can of enchilada sauce. In a pan layered flour tortillas, refried beans, meat mixture and cheese (3 layers). baked in oven for about 20 minutes.

Wife loved it!!!!!!
