Teriyaki Marinade for Venison Medallions -- this is excellent IMO: 4 4oz. venison medallions -- I used two 1/4 cup oilive oil 1/4 soy sauce (I used regular very dark) 1 TBS lemon juice 1 TBS rice wine vinegar 1 TBS fresh ginger peeled and grated 1 clove garlic 1/4 tsp red pepper flakes I mixed all the ingredients together and marinated the meat overnight; turning a couple of times; removed the meat from the fridge approx. 20 mins. before I was going to cook it. Rather than grill them, I pan seared them by spraying a non-stick pan with Pam and a bit of olive oil. cooking each for about 2-3 min on each side; removed the pan from the heat; covered it and let the medallions rest. Then I made a rice pilaf with leftover rice and some sweet peas. This meal was really, really good and the medallions didn't taste gamey. The ginger is really pungent and adds good flavor -- if you like ginger. Grating the ginger is the hardest part of this recipe and I had everything in the house so I didn't have to go out.

I'm in the mood for some fish, thinking later this afternoon I'll hit a couple of Asian markets and see if they have any ling cod(one of my favorites). If not, then a couple steaks of halibut. Have no idea what's going to side with it...
