Mardi gras food...Sounds good...We don't often have the opportunity to eat crawfish, or mudbugs, or whatever everyone calls them (crayfish?). Wish we could more often. We love Cajun/NO cooking.

Maybe fish for dinner...When it's smokin' it's cookin. When it's black, it's done.

A crawfish étouffée, if made with a roux, usually has a reddish color: this is sometimes mistakenly attributed to crawfish fat (an important ingredient). Crawfish fat is bright yellow, and will not color the dish red: the red color comes from the dark brown-red roux. Seasonings the crawfish were boiled in could also give the dish a red tint. There is typically no tomato in this dish. However, in some areas it has become popular to add tomatoes or tomato paste to the dish. There is a significant difference between the etouffes of Lafayette (Acadiana Cajun Country), and those of New Orleans (Creole) and surrounding areas. The Cajuns make their etouffee with a cream sauce, and the Creole style is red-brown.

Last night, Jim made the best stir fry I have ever tasted. He made it with Worchestshire and lemon juice with every pepper on the planet. Tonight, since I never got around to making my spaghetti and meatballs, that is definitely tonight. It has been so long since I had spaghetti!
