The Mrs does not like duck (but likes the downstream extras, like duck fat in eggs, potatoes, etc) so I only cook one on the rare occasion that I am alone.

Va, I'm not a big fan of sauces on my food. Though did have a lot of experience with sauce making (pun intended) in my first few jobs. I'm good with a little on my Benedict or green vegetables, but tonight I just dunked the cut up Broccolini -stems first, then flowers a few minutes later- into boiling water, shocked them in an ice bath, drained them, then sautéed them in a little bit of evoo that I'd flavored with a few cloves of smashed garlic and S&P to taste.

Interestingly enough, unlike the papal pecking order of broccoli, sauces have a maternal hierarchy. Your Hollandaise happens to be one of the 5 mother sauces. Though, I can't recall of the top of my head all of the others or what you can make, using them as your bases.

Time to dig out my Larousse Gastronomique....or watch the Patriots.

Have you tried hollandaise on broccolini? Outstanding.

I had ahi tuna over asparagus, red quinoa and an orange-citrus sauce. Pretty good.

OT: butternut squash ravioli with a light butter-garlic sauté. some broccoli sautéed in garlic & evoo, topped with a fresh lemon squeeze as the side.
