Marinated over night in zesty Italian dressing chicken thighs. Grilled then tossed in franks hot sauce served over a garden salad with blue cheeses dressing. Lots of diced tomatoes and croutons in the salad too.

That sounds like good eating, BT! If we ever get a chance to meet, I would love to get a taste of that. ;-)

Should have spell checked that last one...

Guess I was, but really just meant to convey it as it was explained to me.

I watched Emeril do a show once on tailgating food. One of the things he did was hollow out Anaheim chilis, stuff them with a mixture of roasted corn, goat cheese, crawfish tails (you squeamish folk could substitute peeled, deveined shrimp) scallion, and garlic. Wrap them in foil, and oven roast them. He left them in the foil for service. I've made them quite a few times for parties and have modified the recipe a few times, using ground beef, pork, and chicken and subbed in blue cheese and cheddar.

You're assuming I want the heat toned down.

The Mrs. doesn't especially like spicy, so I rather aggressively removed the membranes as well as the seeds. They were barely hot at all - almost sweet. DAMN!
