For those looking for a "quickie" meal, and one the kids will actually eat, try making corn fritters. I learned how to make them in high school and always loved them.
Depending on the amount of fritters wanted, mix 1 cup of pancake mix with 1 can of cream style corn, and 1 can of whole kernal corn (drained). Mix and cook like pancakes. Serve hot and cover with desired topping (butter and maple syrup, applesauce, jelly, cream cheese... ect).

Anyone that was ever here when I made them, took to making them as much as I do.... lol

Another quickie dip snack that has been a big hit at my parties:
A cube of cream cheese
Pour over a jar ( the little round one that says Home Made) Chile Sauce, it is kinda sweet.
Serve with Hard Crackers like Wheat Thins... Yummie it disappears real fast

Hey J & C, and anyone else interested. If you like jello shots at your party you should go to suck and blow dot com. we bought some of them and there are a huge ice breaker and conversation piece. plus it saves a little work. they have different recipes on the site, not to mention that they are a blast.

For your leftover Easter Eggs try making deviled eggs but add can of drained chopped green chiles instead of relish.. gives a nice unexpected kick to the old stand by....
